Palkova/Milk Sweet


INGREDIENTS:

Milk - 500 ml
Lemon juice– 3 to 4 drops
Sugar – 4 tbsp
Ghee – 2 to 3 tspn

START:

1)Heat Milk in a pan and add Lemon juice into that. Keep it aside.
2)Heat a pan. Add 2 to 3 tspns of Ghee into the pan.
3)Pour the pre-treated Milk in to the pan and then add Sugar.
4)Stir this mixture till the Milk separates into very tiny particles (like beach sand) and becomes thick. Palkova ready!

Note: Serves for 2 people

Rava Kesari


INGREDIENTS:

Rava- 1 cup
Sugar- 1 1/4
water- 1 1/2 cups
milk- 1/2 cup
ghee- 4 tbsp
cashews- 6
Raisins- 2 tbsp
Pista- 3
cardomom powder-1/4 tsp
kesari colour/orange food colour-a pinch

METHOD:

1) Heat 3 tbsp of ghee in a pan and fry the rava for a few minutes till a nice aroma comes out. keep aside.
2) Boil water and milk,add the food colour and add rava to it slowly by stirring continuously.
3) Add sugar and mix well. By this time the rava would have been almost cooked and so reduce the flame and keep stirring in between.
In another pan heat 1 tbsp of ghee and add cashews,pista and raisins. Fry till golden brown and add to rava mixture. Sprinkle cardamom powder and mix well.
Kesari ready!

Carrot Halwa


Ingredients:

Carrot: 1/4 kg Cardomom (yelakai): 4
Sugar: 1/4 kg Cloves (Krambu) :4
Milk: 1 cup Cashews: 15
Dalda: 100 gm Few drops orange color(optional)


Start:

1.Peel and grate carrots.
2.Put milk and carrots in a heavy saucepan. Boil till thick, stirring occassionally. Once it starts thickening, stir continuously. Add sugar and cook further till thickens. Add Dalda,Cardomom,Cloves and colour. Stir on low heat till the mixture collects in a soft ball or the ghee oozes out. Serve hot, decorated with a chopped Cashews.

Rava Urundai/Balls


Ingredients:

Rava: 1 cup
Sugar: 1 cup
Cashewnuts: 6 to 8 nuts
Cardomom (yelakai): 2 to 3 (Powdered)
Ghee: 5 Tablespoon

Start:

1. Fry Rava & Grind it to powder.
2. Grind Sugar.
3. Fry Cashews in Ghee & Keep it aside
4.Mix Rava & Sugar together
5.Add cashews & Cardomom to this;add ghee little by litle and make it to small balls.

Diamond Cuts


Ingredients:

Maida - 500 gms Coconut - 1
Sugar - 250 gms Salt - 1/2 Tablespoon
Dalda - 60 gms Coconut oil - 1/2 Litre

Start:

1. Mix Salt,Maida,Dalda using Coconut Milk ( make it exactly like what u do for chappati),then cut that into small diamond pieces.
2. Fry them in oil.
3.Put sugar in boiled water(100ml),after 15mts put these pieces into sugar syrup.Its ready!
